Abstract
There is a growing international awareness that food fraud is prevalent in most countries, although the exact extent of these frauds is unknown. The fragmentary and complex nature of food supply chains makes the industry particularly vulnerable to fraud. Alongside calls for greater scientific testing of foods and for specialist food fraud policing units to be employed, a few commentators recognise the need for businesses to improve their resilience to fraud by using counter fraud and forensic accounting techniques to protect themselves against fraudsters. Different techniques are examined and evaluated against recent developments in intelligence gathering and risk assessment within the industry. However, there are underlying issues relating to food pricing and costing that create both the conditions for fraud and barriers to implementing steps to prevent fraud.
